Low Carb Apple Bread Pudding


Bread Pudding is one of the many scrumptious deserts loved in many countries all over the world, that I absolutely love! It's a bread-based dessert that incorporates egg, sugar, cinnamon with other spices, vanilla and most of time includes raisins. 
Well, while researching healthy desserts on the web I came across a few ideas in a forum for low carb bread pudding and decided to play around using stale wheat bread, sauteed apples, and wait for it...Sugar Free Vanilla Pudding Cups? 


Low Carb Apple Pudding
Serving size 2

Ingredients: 
3 Slices of whole wheat stale bread
1 pudding cup and 1/2 of another of sugar free vanilla pudding
1 green apple chopped
1 teaspoon of stevia (I used Truvia brand) 
1 teaspoon of brown sugar
1 teaspoon of cinnamon
1 teaspoon of vanilla extract 

Sauté apples with the butter, stevia, and brown sugar for about 8-10 minutes. 
While apples are cooking, cut the wheat bread into cubes. Not too small or the bread with become mush once you mix in the wet ingredients. In a small bowl, mix together the pudding with cinnamon and vanilla. Add the bread to the pudding lightly mixing it, then fold in the apples. 


Put the mixture in a glass dish. I used a 5" ramekin. Put it in a 350 degrees preheated oven for 40 min. 
It doesn't come out too pretty. But if your serving it for a party, dress it up in a martini glass, drizzle a little sugar free caramel sauce on top, and wha-la! Bon Appetite
